To leave turn based mode, hit R2 to bring up that radial wheel, in the bottom left, between the map and a short rest is a prompt called "Turn-Based Mode" selecting this will pull you out of the combat loop with the Environmental Turn having turns. I'm pretty sure you can reload and never enter Turn-Based Mode if you disarm everything first.
